For over 50 years, our family of restaurants have showcased the largest collection of fine spirits in the Northwest. Our dedication to creating delicious cocktail recipes requires a great mixing spirit that pairs well with anything our mixologists can dream up. To this end, we sourced a restaurant line of base spirits that is mixologist approved for your everyday cocktail.

We sample bourbon from all over the country and select the finest expressions for our distillery in Woodinville, WA. We think exceptional bourbon is a function of time, temperature, and the magic of oak. To this end, we use a Triple Oak Process to finish our bourbon under the careful watch of the Master Distiller.

Triple Oak Process

1.     Our bourbon is selected and aged a minimum of 4 years in virgin hi-char American White Oak barrels.
2.     A close relationship with our cooperage provides us with custom toasted staves that concentrate flavors and smooth the spirit. Our Master Distiller inserts the custom oak into the barrels drawing out the natural sweetness of vanilla bean, butterscotch and creamy caramel.
3.     Then each barrel is aged for additional time and tested for rich smooth flavor before being bottled with our proprietary Savor Spear® that imparts balanced character, nuanced sweetness and geniality.
